Preparing a filling scratch-made breakfast doesn’t mean you have to stand over the stove stirring the pot of homemade oatmeal each morning. This recipe is perfect for when you want to get up before everything really gets going for the day. You can prepare the blackberry baked oatmeal, slide it into the oven, then go on about your morning chores. Let the oven warm the kitchen as everyone gets moving.

Each year when we put up blackberry preserves I am looking for ways to use this yummy summer staple beyond buttermilk biscuits with jelly. This recipe fills that desire perfectly and makes use of our garden’s bounty in a creatively satisfying way.

If you have never tried a baked oatmeal, a common complaint is that they are sometimes dry and crumbly. This recipe is definitely cakey when compared to traditional oatmeal, but the addition of eggs, milk, and the preserves ensures a lovely, moist end-result each time.

Can I prepare Blackberry Baked Oatmeal ahead of time?

For sure. When I need Sunday morning breakfast ready-to-go I make this in the crockpot. Add the 1/4 cup extra water and set the slow cooker on low as you head to bed the night before. You will thank yourself in the morning.

Can I substitute other fruit preserves for the blackberry jam?

Oh my goodness, yes!! And please do. You won’t be disappointed. If you’ve got waaaay too much apple butter in the pantry, this is your go-to breakfast as you work through your excess. My favorite variation was when I had peach jam and some fresh basil that needed to come in before the frost. That peach basil baked oatmeal experiment had me thinking I was in the Garden of Eden!!

When blackberries are picked and preserved at the peak of the season’s perfection offer a myriad of health benefits and nutrition to our bodies. The distinctive dark black coloring indicates that these summer fruits are loaded with anthocyanins, a key factor that lends to their antimicrobial and antioxidative properties.

Blackberry Baked Oatmeal

Equipment

  • 1 High speed Blender
  • 1 Slow Cooker if preparing overnight version

Ingredients
  

  • 2.5 Cups Rolled oats, divided
  • 1 Cup Chopped walnuts, toasted lightly can also use pecans
  • 1/2 Cup Dried peaches can substitute dried cranberries or raisins
  • 1 Tsp Baking Powder
  • 1 Tsp Ground Cinnamon
  • 1/2 Tsp Real Salt
  • 1 1/4 Cup Milk
  • 2 Large Farm-fresh Eggs
  • 1 Cup Blackberry Preserves or other fruit butter/preserves
  • 1 Tsp Vanilla
  • 1/4 Cup Organic Cane Sugar or Sucanat
  • 1 Cup Water, possibly up to 1/4c more

Instructions
 

  • Preheat oven to 375°F and prepare an 8×8 inch dish with some butter, lard or other non-toxic fat.
  • Blend 1 CUP of oats into a coarse grind in the blender.
  • In a mixing bowl, combine remaining rolled oats, the ground oats, walnuts, dried fruit, baking powder, cinnamon, and salt.
  • Into the blender pour milk, eggs, preserved fruit butter or jam, vanilla, sugar, and water. Blend well.
  • Pour blender contents into the bowl containing the oat mixture and mix well.
  • Pour the oatmeal batter into the prepared baking dish, using a spatula to scrape all the sides of the bowl well.
  • Bake 43-45 minutes and serve while warm with fresh milk and a smile.

Notes

Use what you’ve got on hand.  Any fruit butter or preserve can work well in this recipe.  I have use pumpkin butter, pear honey, apple butter, and plum preserves with great success each time.

Leftovers and Storage for Blackberry Baked Oatmeal

Truth be told, there are never any leftovers when I make this in an 8×8″ dish for our family of 8. Everyone gets a square and we are done. If you have fewer people or are wanting breakfast for the week this is still a great choice. Cover and store the leftover oatmeal in the refrigerator for up to a week.

Each time you want to have some Blackberry Baked Oatmeal simply reheat the portion you want in an oven-safe dish with a little milk. This probably works in a microwave as well, we just don’t own/use one in our kitchen. Reheat in the oven at 250°F for 10-12 minutes. Also, teenage boys will eat this cold as a snack straight from the refrigerator.
