Smoky Black Bean Soup
This creamy and delicious Black Bean soup is prepared from dry beans and a few fresh ingredients from your pantry. You will love the convenience of preparing it in the Instant Pot.
Ingredients
- 1 Lb Dry Turtle Beans (Black Beans)
- 10 Cups Filtered Water
- 1 Green Pepper
- 4 Cloves Garlic
- 1 Onion, Large
- 1 Poblano Pepper, small Optional
- 3 Tbs Lard, Ghee, or Coconut Oil
- 1 Tbs Real Salt
- 1/2 tsp Freshly Ground Black Pepper
- 2 Bay Leaves
- 1/4-1/2 tsp Ground Cumin
- 2 1/2 Tbs Red Wine Vinegar
- 2 1/2 Tbs Olive Oil
Instructions
- Rinse beans and soak overnight with 10 cups of water in large bowl or Instant Pot liner.
- In the morning rinse beans, discard water, and fill Instant Pot liner with beans and 8 cups water or broth.
- Add ham bone or smoked turkey for flavoring if desired and cook on high pressure for 45 mins.
- Chop or dice onion, peppers, and garlic.
- Heat the coconut oil in a heavy skillet and saute' onion, garlic, and peppers until soft.
- Remove a little broth from cooked beans and add to blender or stick blender vessel.
- Add aromatics from skillet to broth and blend/puree until fine.
- Add pureed aromatic seasonings, spices, and any diced meat if desired to Instant Pot.
- Replace lid and cook for 20 mins, or use chili/bean setting if desired. You can also use the slow cooker function on LOW setting until ready to serve.
- Just before serving, add vinegar and olive oil. Mix well.
