The Joy of Spring Salads & a Secret Weapon Dressing
Here in Coastal Alabama, after the last chilly whispers of winter finally fade, there’s nothing quite like that feeling when the garden bursts back to life. Those first tender shoots of lettuce, crisp radishes, and vibrant spring onions feel like pure treasure. And what better way to celebrate this fresh bounty than with a crisp, vibrant salad?
But let’s be honest, a great salad isn’t just about the greens; it’s often about the dressing that ties everything together. If you’ve ever tasted a truly amazing restaurant salad and wondered, “How do they do that?”, I’m here to tell you: it’s often a simple, homemade dressing. Today, I’m going to share my absolute favorite secret weapon for turning humble garden veggies into a gourmet experience: my Dill Vinaigrette Recipe From Scratch. It’s so easy, so fresh, and will make your spring salads sing!

Why Your Salads Deserve This: The Magic of Homemade Dill Vinaigrette
You know how sometimes a store-bought dressing just falls flat? Or it’s loaded with ingredients you can’t even pronounce? That’s not the homestead way! Making your own dressing from scratch means you control every delicious bit that goes in. And when you’re lucky enough to have fresh dill bursting in the garden, it’s a game-changer.
This Dill Vinaigrette Recipe From Scratch isn’t just easy; it’s designed to bring that “fancy restaurant” flavor right to your kitchen table, using ingredients you probably already have in your pantry and fresh herbs from your garden. It’s light, tangy, and bursting with fresh dill flavor, making it incredibly versatile for all sorts of spring salads. No complicated steps, no weird additives—just pure, fresh taste.
Restaurant Quality, Homestead Easy
You might think “restaurant-quality” means complicated, but with this dill vinaigrette, it’s just the opposite. The secret is using fresh, simple ingredients and letting their natural flavors shine. This dressing works wonders because:
- Fresh Dill: The star of the show! It brings a bright, herbaceous note that screams “spring.”
- Simple Pantry Staples: Walnut oil, Avocado Oil, a touch of White Balsamic Vinegar, Dill, Honey, Salt, and Pepper. That’s it!
- Quick to Make: Seriously, you can whip this up faster than running to the store for a bottle of dressing. And it tastes a million times better.

- 2 Tbs Honey
- 1 tsp Dill
- 1/4 tsp Real Salt
- 1/4 tsp Fresh Ground Pepper
Instructions
- Put all ingredients into a Mason jar, screw lid on. Shake until completely emulsified.
- Alternately, you can put all ingredients in a tall measuring glass and blend with immersion blender until completely emulsified.
Notes
Putting Your Dressing Together
- Chop the Dill: Wash your fresh dill and chop it up nice and fine. I love to use my herb snips for this.
- Combine: In a small bowl or a jar with a tight-fitting lid, add the oils, vinegar, chopped fresh dill, Dijon mustard, honey/maple syrup, salt, and pepper.
- Whisk or Shake: If using an immersion blender, pour everything together and blend until it’s well combined and slightly thickened. If using a jar, screw on the lid tightly and shake, shake, shake!
- Taste & Adjust: Give it a little taste. Does it need more salt? More pepper? A bit more tang? Adjust to your liking.
- Serve & Store: Use immediately, or store in a sealed jar in the refrigerator for up to a week. Give it a good shake before each use, as the oil and vinegar may separate.
Spring Garden Stars: Salads That Shine with Dill Vinaigrette
Now that you’ve got your amazing dill vinaigrette recipe from scratch, let’s talk about the stars of the show – the salads! These are just a few ideas that highlight the fresh flavors of spring and pair perfectly with that zesty dressing.

Salad 1: Sweet & Savory Strawberry Arugula Crunch
This salad is a celebration of early spring’s bounty. The peppery kick of arugula is beautifully balanced by the sweetness of fresh strawberries.
- The Base: A generous bed of fresh arugula, plucked straight from the garden if you’re lucky! Its peppery bite provides a wonderful contrast.
- Sweet Surprises: Halved or quartered fresh strawberries. There’s nothing quite like the first berries of the season!
- Creamy Delight: Slices of fresh mozzarella. If you’ve got homestead dairy animals, homemade mozzarella takes this to a whole new level of creamy goodness. Otherwise, good quality store-bought works just fine.
- Homestead Crunch: A handful of toasted walnuts. If you’re able to harvest walnuts from your own homestead, these add a fantastic earthy crunch and healthy fats.
- Savory Touch: Shredded cooked chicken (great for using up leftovers!).
- Garden Zest: Thinly sliced green onion for a mild, fresh onion flavor.
Why it works with Dill Vinaigrette: The bright, herbaceous dill cuts through the richness of the mozzarella and chicken, while its tang beautifully complements the sweet strawberries and peppery arugula. It’s a symphony of flavors and textures!

Salad 2: Crisp Apple Spinach Delight
Simple, elegant, and packed with flavor, this salad combines crisp textures with creamy richness, all brought to life by the dill dressing.
- The Base: Tender baby spinach leaves. They have a milder flavor than arugula, allowing other ingredients to shine.
- Crisp Tartness: Thinly sliced Granny Smith apples. Their tartness and crisp texture are a perfect counterpoint to the other ingredients.
- Subtle Bite: Very thinly sliced red onion. Just enough to add a little zing without overpowering the salad.
- Nutty Goodness: More walnuts from the homestead (or store-bought). Their crunch is essential!
- Tangy Creaminess: Crumbles of creamy goat cheese. Its distinctive tang pairs wonderfully with apples and onions.
Why it works with Dill Vinaigrette: The fresh dill and tang of the vinaigrette brighten the apples and spinach, while the mustard in the dressing helps cut through the richness of the goat cheese. It makes every bite feel fresh and exciting.

Salad 3: Bold Kale & Bacon Bliss
For those who love a hearty salad with big flavors, this one combines the robustness of kale with savory, tangy, and crunchy elements.
- The Base: Massaged kale. Take a bunch of kale, remove the tough stems, chop it, and then massage it with a tiny bit of olive oil and a pinch of salt. This breaks down the fibers and makes it wonderfully tender – no tough kale here!
- Rustic Crunch: Toasted walnuts, adding that satisfying bite.
- Sharp & Creamy: Crumbles of pungent blue cheese. If you’re a fan of strong flavors, this is your go-to.
- Tangy Pop: Homemade pickled onions. You can quickly pickle sliced red onions in apple cider vinegar, a pinch of sugar, and salt for about an hour for an amazing tangy kick that balances the richness of the bacon and cheese.
- Irresistible Savory: Crisp bacon crumbles. Because, well, bacon.
Why it works with Dill Vinaigrette: The vinaigrette’s tang and fresh dill cut through the richness of the bacon and blue cheese, making the kale feel lighter and more vibrant. The acidity of the dressing also beautifully complements the pickled onions.
