Rise and Shine: Farmhouse Popovers for Breakfast with Freshly Milled Flour

Not just another eggs for breakfast recipe. These popovers for breakfast are delightfully different and easy to make with pantry staples and farm-fresh ingredients.

I first began making and serving popovers as a special accompaniment to our Easter meal after I encountered them in a Brazilian steakhouse. That cheesy, eggy goodness combined with the light airy addition of baking had me hooked at the first bite.

My family enjoyed them as well, but once a year at Easter dinner just isn’t enough. Then there’s the need to use up a surplus of eggs most of the time here on the homestead. The solution jam popovers for breakfast.

This idea came from a need I have, like most of us, to actually use the jams and various preserves we have stored in the pantry in uses other than on top of sourdough toast or homemade biscuits.

You will love this truly farmhouse style meal. Almost every ingredient used is produced on the homestead which makes me feel really good every time my family sits down to enjoy this wonderful breakfast.

How do I make popovers for breakfast?

Like most popovers, these can be enjoyed in both savory and sweet applications. What you are creating is simply a basic custard that you then bake and top with your favorite filling. Whether that be a dollop of some yummy farmer’s cheese or a nice chutney.

Jam Popovers for Breakfast

Cook Time 20 minutes

Equipment

  • 1 Grain Mill Nutri-mill is my go-to workhorse.
  • 1 High speed Blender I love my Ninja.

Ingredients
  

  • 1 Cup Fresh Whole Milk
  • 2 Large Farm-fresh Eggs
  • 1 Cup Freshly Milled Flour Use wheat of choice, milled on extra fine setting. My choice is Soft White or Kamut.
  • 3/4 Tsp Real Salt
  • 1/4 Cup Home-canned fruit preserves such as strawberry Chutneys work great too.

Instructions
 

  • Preheat oven to 350°F
  • Grease or line a 12-cup Muffin pan.
  • Mill your flour if you have not already done so and measure out 1 cup.
  • In a blender, place milk, eggs, flour, and salt. Cover and blend until smooth. Stop and scrape down the sides, puree another 30 seconds.
  • Allow to sit for approximately 10 minutes to allow the flour to absorb the liquid. Scrape and blend for another 30 seconds.
  • Carefully pour the batter evenly into the muffin cups, filling only 1/3 full to allow for expansion.
  • Bake 20-22 minutes until the popovers begin to puff up and brown a bit on the top.
  • Avoid opening the oven too frequently. Remove from oven once finished, place popovers on a plate to fill and put more batter in the cups to bake.
  • Your popovers will begin to deflate in the center as they cool. They are best when served warm so put approximately 1tsp of jam in the center and enjoy.

Notes

These are perfect appetizers when prepared in a mini-muffin pan.  

What are some other ways to enjoy popovers?

These yummy bites can be enjoyed almost anytime. These are great when reheated as snacks. You may also enjoy making them to serve as appetizers. Be creative with your fillings and use up that last jar of tomato jam once and for all!

If they have puffed just a bit too much, go ahead and use the back of a spoon to press the middles down, then fill. If you are lucky enough to have leftovers, these are best when reheated in a countertop toaster oven.

It is so important as we remove ourselves from broken systems that we put healthy, nourishing options in to fill that void. If not, we will find ourselves back in the grocery store, staring at the wall of Pop-Tarts, asking the kids which flavor of poison they want.

None of us want to go back there and I have learned that it is simple, basic recipes like these popovers for breakfast that keep us away from taking the convenience trap that has been set out for us. No one has my family’s health and well-being in mind more than I. The food manufacturers are not in business to provide nourishment to the masses. Protecting their bottom line is their main concern and I will no longer participate willingly in the destruction of healthy bodies by purchasing those products.
